Classic Smashed Burgers Recipe

 

Necessary things:

1.5 lb Certified Angus ground beef, 80% lean, 20% fat.

1/2 cup mayonnaise

1 teaspoon yellow mustard

1 teaspoon chopped yellow onion

2 tablespoons hot sauce

1 tablespoon Worcestershire sauce

4 white hamburger buns

2 tablespoons butter, room temperature

1 1/2 teaspoons kosher salt

1/2 teaspoon pepper

4 slices of American cheese

2 cups shredded iceberg lettuce

8 slices of grape tomatoes

Instructions:

Divide beef into 8 pieces, each about the size of a ping pong ball (about 3 ounces); Keep refrigerated.

Make a unique sauce by mixing together mayonnaise, mustard, grated onion, hot sauce and Worcestershire sauce in a small bowl. Cool in the refrigerator.

Heat the buttered toast in a large cast iron skillet or two large cast iron skillets, then divide between plates.

Place the beef balls on a hot baking surface. Using a large metal spatula, form each ball into 1/4-inch-thick patties. (Tip: Use the handle of another spatula to push down for extra force. Using parchment paper will help prevent the shoulder from sticking to the beef.)

Season the slices with 1 tablespoon of special sauce per slice, then season with salt and pepper. Cook for 2-3 minutes until some of the fat begins to bubble in the center of the patty. Quickly flip and spread a slice of cheese on each of the 4 patties. Cook for another minute, then place an empty stick on top of each cheese-covered patty and remove from the cooking surface.

Spread the unique sauce on the bottom bun, then add chopped lettuce, tomato, two burger patties and the top bun to form the burgers.
